猪皮冻的做法如下:
1、首先放点小苏打,倒入清水简单清洗一下,清洗之前要把表面有猪毛的地方处理干净。

猪皮冻的成品要求是:晶莹剔透,入口即化且爽口。它的制作难点在于如何让皮冻看上去晶莹剔透。因为只要有油脂存在,熬好的皮冻汁中就会有悬浮的脂肪颗粒,成品看上去当然不够透明。那么如何打造一款晶莹剔透的皮冻菜呢?需要注意以下四个关键点:
关键1 先煮再刮油
猪皮上附着的油脂很多,一定要用刀反复刮除。方法很简单:取处理干净的猪皮放入锅内,加入葱、姜、白酒、盐和八角略煮,捞出后略微放置,即可用刀刮掉猪皮上残留的油脂。
关键2 盐和白醋水二次去油脂
刮净猪皮的油脂后去油脂的过程才刚刚开头,我们还要将改刀后的猪皮再放入加有盐和白醋的水中继续加热、搅拌。
关键3 流动水冲漂
第三次去油脂的过程是长时间反复冲漂。
关键4 鱼胶粉增加Q弹感
传统方法制作皮冻,就是只用猪皮为原料。为了让成品口感更加Q弹,同时更加晶莹剔透,我们在蒸好的皮冻汁中又加入了少量的鱼胶粉。
下面以1.5千克猪皮为例,介绍一下新派皮冻的制作方法:
1 制作皮冻的主料是新鲜无黑色斑点和无淤血的猪肉皮,油脂要少且无毛质。
2 锅入清水(以没过猪皮为宜),下入葱、姜、二锅头白酒各50克,八角10克,盐30克和大块猪皮,烧开锅后转中火煮约5分钟捞出。
3 用刀刮去猪皮上残留的油脂,切成细条(注意:不要刚出锅就刮,一定要晾一会儿待猪皮不烫手时再操作,因为猪皮太热的话,很容易将其刮烂)。
4 锅入水(以没过猪皮为宜),倒入切好的猪皮条,下入盐50克、白醋100克开始加热,期间不停地用勺子搅拌(一是防止猪皮粘锅,二是通过搅拌可以二次去油脂),这个步骤非常关键,很多人做出的皮冻浑浊就是因为缺少这一步骤。
5 开锅后1分钟倒出猪皮,用流动水漂洗30分钟。这个步骤其实是第三次去油、去脂的过程,所以猪皮一定要漂洗干净,很多师傅做出来的皮冻有杂质,就是因为没有漂净的缘故。
6 盆中加入纯净水和漂洗过的猪皮(水和皮的比例2.5:1),封上保鲜膜,入蒸箱蒸制约2小时。蒸制好的皮冻汁清澈见底、无杂质、不浑浊、无油花才算合格。
7 取出皮冻汁,再加入15克鱼胶粉充分拌匀(加入鱼胶粉可使皮冻更Q弹),倒入干净的托盘内放凉后入冰箱冷藏保存即可。
8 走菜(水晶皮冻);取出皮冻切成厚片或是方块摆盘,带一碗蒜汁或是红油味汁蘸食即可。
